Want to try an easy recipe that doesn’t require an oven or stove? These yummy energy bites will keep you upbeat when it’s time to study. Or grab some as a quick and energy-boosting breakfast when you’re running late for school!
What You’ll Need
- 1 small zucchini
- 1 1/4 cup old-fashioned rolled oats
- 1/2 cup chocolate chips
- 1/3 cup raw pumpkin seeds
- 2 tablespoons chia seeds
- 1 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 3/4 cup peanut butter
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Optional: shredded unsweetened coconut or finely chopped peanuts
Directions
Trim the ends of the zucchini and coarsely grate it. Set aside.
In a large mixing bowl, combine the oats, chocolate chips, pumpkin seeds, chia seeds, cinnamon, and salt.
Add the zucchini, peanut butter, maple syrup, and vanilla extract. Use a spatula (or your hands!) to mix until everything is fully incorporated.
Roll the “dough” into mounds the size of ping-pong balls. If you’d like, roll them to coat in shredded coconut or finely chopped nuts. Eat right away or store them in the fridge (they’ll firm up a little) for up to 1 week.
